After
graduating from Berkeley in 2002, Jonathan Michael Stan passed up a potentially
risky, low-paying, and embarrassing career in geotechnical engineering
for the stable, low-stress world of the food service industry. During a
seminal stint at Alice Waters' renowned Berkeley restaurant, Chez Panisse,
Jon became familiar with the world of organic food and sustainable agriculture,
as well as what it's like to wait on today's mega-celebrities, such as
Boz Skaggs and Rue McClanahan. He moved to New York to work at The Spotted Pig, a much-lauded restaurant
in the West Village, but traded in his life of long nights and hard work in
the hope of a "Laverne & Shirley"-style montage of beer-related
